Protein Dessert: Millet cake with plums and vanilla icing

There was a little to much of desserts with millet as the main character, but this combination came out so well that It had to find here! There are many arguments that speak for this dessert, but I will say briefly - it's worth to do it.

Protein Dessert - Ingredients:

Ingredients for cake:

  • 200g of millet (weighted before cooking)
  • 4 whole eggs
  • 200g of pitted plums
  • 100g of lean cottage cheese
  • 20g of vanilla protein Whey 100
  • 1 tablespoon of vanilla extract 
  • Stevia (optional another sugar substitute, eg. Xylitol / erythritol)

Ingredients for icing:

  • 50g of canned coconut milk
  • 20g of  vanilla protein Whey 100 
  • 15g of unrefined coconut oil

1. Rinse millet in cold water and cook according to the instructions on the package. We can even cook it a little longer to make it easier to blend.
Cooked millet leave to cool and pours to a larger bowl.

2.Add to bowl: 100g of lean cottage cheese, eggs, vanilla extract and protein Whey 100.

3. Nextly blend everything properly. The issue of sweetening is individual therefore prepared to recommend weight gradually add the Stevia or other substitute and try;)

4. Pour the dough into a square mold lined with baking paper and arrange the sliced plums.

5. Put the mold with dough into preheated, to 160 degrees, oven for 30-40 minutes continuously controlling the situation :D Baked dough leave to cool.

6. At a time when the cake cools prepare glaze. Coconut milk, protein Whey 100 and coconut oil mix thoroughly together. Put our icing for a while in the fridge / freezer to make it thicker.

7. At the end pour the cake on top and put in the fridge to make everything well tied. Finished! ;)
